Grape Varieties: 25% Pinot Blanc + 25% Pinot Auxerrois + 25% Pinot Gris + 25% Pinot Noir

Production: The grapes are carefully hand picked and pressed. The first fermentation takes place in classic vats. The rest of the winemaking process follows the traditional method. The second fermentation takes place in the bottle for a minimum of 16 months. Riddling takes place on computer programmed gyropalettes.

Appearance: Pale straw in color with a steady stream of pinpoint bubbles.

Nose: Expressive nose with hints of dried fruit and toast, aromatically complex.

Taste: The attack on the palate is full and creamy and followed by a finish that is harmonious and dry.

Gastronomy: Ideal on its own, or can be enjoyed with many different types of cuisine.

Serve chilled.

12.5% ABV, Residual Sugar 2.7 grams per litre
