Crémant D'Alsace - Wild Brut Extra Brut

Origin: Alsace, France
Grape Varieties: 50% Pinot Blanc + 50% Pinot Auxerrois.
Production: The grapes are carefully hand picked and pressed. The first fermentation takes place in classic vats. The rest of the winemaking process follows the traditional method. The second fermentation takes place in the bottle for a minimum of 24 months. Riddling takes place on computer programmed gyropalettes.
Appearance: Pale straw in color with a steady stream of tiny bubbles.
Nose: Fine nose of pastry and floral notes.
Taste: Lively effervescence, balanced acidity, with a citron and slightly saline finish.
Gastronomy: A refined aperitif, or a wine that will pair well with most foods. As the fresh salinity and balance of acidity makes a nice companion to many dishes.
Serve chilled.
